Real-Easy Rocky Road


What I love about Rocky Road is that it’s totally customisable. You can chop and change up ingredients to make a super tasty snack that you’ve thought up all on your own, and what’s more – the more specific you make it to your tastes, the less you have to share; (cue evil laughter).

But seriously, there’s very few people that dislike Rocky Road, it requires very little effort for a big tasty payoff! So let me show you how I did mine.

Ingredients

600g of Galaxy Chocolate
4 Chocolate Digestives
Half a bag of Mini Marshmallows
2 Big Dollops of Salted Caramel Sauce
100g Dark Chocolate

Method

So first up you’re going to want to melt that truckload of chocolate you’ve got. You can do it in 30 second intervals in the microwave, or over the heat using a bamboree method (which I think is slightly better) until it’s a nice bowl of smooth, runny chocolatey-ness.

Let it cool for about 10 minutes, then add your mini marshmallows and stir with a wooden spoon until their fully incorporated in a delightfully gooey mix. Once you’re happy with this you’re going to snap up your digestives and plonk them in the mixture, this doesn’t have to be near, just break them up into bite-sized chunks and mix them in as you did the marshmallows.

Once that’s done you’re going to want to add your salted caramel – this is where things can get sticky! Chuck in your dollops and mix as well as you can – you may find the mixture begins to firm up almost instantly – but that’s okay! Stir it in until you’re happy that everything is mixed in fully and then pop it into a tray lined with greaseproof baking paper, spreading out the mixture ensuring it covers the base completely and evenly.

Once you’ve done that it’s time to melt your dark chocolate (you can use the same bowl as before – it saves on washing!) When it’s melted and cooled slightly, drizzle heavily over your rocky road base; it won’t cover it completely – but that’s what we want.

Once you’re satisfied, pop it into the fridge for approximately 2 hours to set.

After the 2 hours, you can get that tray of deliciousness out of the fridge and dig in! Lift out the rocky road using the baking paper and cut your rocky road into rough chunks; sure this stuff ain’t the prettiest, but it packs a lot of flavour and looks delightfully homemade.

Stack on a plate and enjoy with a glass of milk and your favourite people. You can even pop these guys into a cute mug, wrap up in cellophane and give to your best as an adorable little gift!
