5-minute (prep) cookies!


In the spirit of my previous 5-minute Make-Up post, I decided to match that with a 5-minute cookie recipe! 

Now, whilst this doesn't include cooking time (which is still only 10 minutes FYI) - it's a real quick, easy and  yummy concoction; perfect if you’re having a sleepover with friends, you want to be super cute and surprise your other half, or if you just fancy curling up with freshly baked cookies and a Matthew Mcconaughey movie.

I LOVE to cook and bake, however I will hold my hands up and admit that I am the messiest, slapdash (great word) creator in the world. I very rarely have time for such equipment as scales and sieves and when I do, I have a hard time keeping the ingredients from making an appearance in every nook and cranny of my kitchen. However, despite the odds and my ruthlessness in the kitchen, my creations actually turn out pretty great (if I do say so myself) which is why I have decided to share this, for anyone who fancies a simple indulgence in 20 minutes or less.

So let’s dive right in. You will need;

Ingredients
100g butter at room temperature
150g caster sugar
130g S.R flour
50g cocoa powder
1 egg
dash of milk
dash of vanilla essence
An assortment of chocolate chunks and chips (as many as you like, go nuts!)

Method

0:10 Whack your oven onto 200° and gather your measured ingredients

0:32 Combine your sugar and butter in a bowl and mix together on super-fast speed, this should take about 15 seconds


0:47 Crack your egg and whisk for a further 10 seconds


0:57 Add all your dry ingredients and mix on high speed for about 20 seconds

1:10 The mixture is pretty stiff by now so add a dash of milk and continue to mix until smooth


1:58 Add in your chocolate chunks and continue to mix until they're distributed evenly




2:17 Add a dash of vanilla essence and mix

3:00 Boom! Nearly there, get some baking trains and grease with butter or cover with baking paper 

3:49 This is the messy part; using your hands, get about a palm size amount of batter and place on tray, space them out evenly - I did about 5 cookies per tray so they have room to expand

4:16 Get them in the oven! You're all done! Now you have 10 minutes to be pro-active and clean up the mess you made - or in my case, lick the batter off your hands and whisks...and bowl. This is what Mary Berry (Einstein of the baking world) calls "The chef's treat", and boy is it! 




Fab, after 10 minutes, take your cookies out and leave them to harden and cool. After about 20 minutes, they'll be ready to enjoy with a glass of milk and your tv show of choice. 

This is a perfect Sunday, easy-day whip up recipe, so give the bikini-diet a rest for the day, sit back and soak up the relaxation before your new week ahead.

  1. I have tried these although only one as we were only given two haha. These are gorgeously yummy and to simple to be so. Well done, already put the recipe in my cook book and will try and pass it off as my own :-) xxx
