So, this is where I indulge you in my ever-so-secret recipe of literally the best brownies YOU WILL EVER TASTE.
Now I know I'm being modest, but this is honestly one of my favorite creations to date, and has turned me into a complete brownie snob, so much so - that I can no longer order these in cafes anymore, purely because I have ruined myself by my own creation.
So whilst I try and deflate my head, below is a list of ingredients which you'll need.
INGREDIENTS
100g Margarine
350g Sugar
150g S.R Flour
100g Cocoa Powder
1/4 tsp Salt
2 Eggs
100mls Vegetable Oil
SO MANY CHOCOLATE CHIPS
TOPPING
4oz Margarine at room temp
4oz Cream cheese at room temp
11oz Icing sugar
Now, there's a couple of things in there which you may deem unusual, but don't fret, we're giving my classic brownies recipe a bit of a twist, and will be finishing the creation, with a top layer of oozy cream cheese frosting - that's right, you better tell your gym you're taking a day of, and get some elasto-waist at the ready, because today is all about indulgence.
You'll start by mixing together the margarine and the sugar, then gradually adding the eggs. I use a standard electric mixer, I long for the day I can saunter into John Lewis and pick out a mint green Kitchen Aid, but alas that won't be for a few years yet - and this gets the job done just as well (aside from the slight painful screeching noise it makes whenever I turn it on).
You can use whatever electric mixer you have whether it's one like mine or a hand held one - heck even use a whisk if you've got the guns to do it, instant Madonna arms!
Next you'll be throwing in the flour and salt, then once mixed thoroughly, add the cocoa powder.
Pop it into the oven on 180° for about 15 minutes, now we can prepare the fluffy cream cheese frosting (this literally take seconds so you have time for a sit-down while you scrape the bowl, you earned it!)
Now, once your brownies are letting you know their ready to be freed from the oven, (the smell should be driving you crazy by now), you should be able to put a clean knife into the center, and lift it out with no chocolate sticking to the knife.
Take them out of the trays and place them on a baking tray for about 10 minutes while they cool down and finish cooking inside. Once cooled (for the most part anyway) lather on the thick cream cheese frosting to your creation, this is going to add a really smooth texture to your stable yet fluffy brownies - enjoy with a glass of milk and episode of New Girl (optional) and you have achieved total indulgence.
Enjoy! x
